Financiers (almond cakes)


½ cup ground almonds

3.5 oz butter

1/4 cup  flour

1 ¼  cups icing sugar

4 egg whites


Mix ground almonds, flour and sugar.

Add the egg whites one by one. Continue to stir to keep an homogeneous mixture.

Melt the butter in a pan, then add it to the mixture.


Pour in a financiers silicone mold only up to ⅔ of the countenants (


If you want to try raspberry financiers just place one in the middle before placing the mold in the oven.


Let cook 5mn at 460°F

Lower down to 360°F for 10mn.
